Slow-Roasted Tender Chicken
Here's a recipe I experimented with for the first time when I was in college. Cooking meat low and slow makes it break down and fall off the bone which is why it is my favorite way to cook. This chicken is served great with green beans, mashed potatoes or over a bowl of rice.

What You Need:
- 1 whole chicken
- Olive oil
- Italian seasoning
- Salt
- Black pepper
Instructions:
1. Pat chicken dry
2. Rub olive oil all over - enough to coat the whole bird
3. Mix up your seasonings and coat the chicken generously
4. Make sure it's well covered - don't be shy with the seasoning
5. Stick it in the fridge for a few hours
6. Oven at 225°F
7. Cook until it hits 165°F internal temp (3-4 hours usually)
8. Let it rest before cutting
Notes:
- Be generous with seasoning
- Low and slow is the key
- Meat will be incredibly tender
- Don't overthink it
Simple method, amazing results. The long, slow cook makes the meat fall off the bone.
